Summer Sweets: No Bake Key Lime Cheesecake Jars

Today kicks off the first day of summer. And my first blog post since my first and only blog post last January. I got a little distracted making a baby and bringing her into this world. But more on that later! Today, I’m whipping out a quick and dirty one for everyone asking about the recipe I featured on SALive yesterday afternoon.

With temperatures rising, the last thing you want to do is turn on that oven and heat up the kitchen. These refreshing No Bake Key Lime Cheesecake Jars are the perfect treat to keep you AND your kitchen cool, all while entertaining the kids. Because let’s face it – school has only been out for 3 weeks and you are running out of fun activities to keep them from driving you crazy. These petite treats take under 30 minutes to make and a bonus hour of bribing for good behavior while they chill in the fridge. Everyone wins!

Ingredients

10 half pint mason jars, washed and dried

1 sleeve graham crackers

2 TBS brown sugar

3 TBS melted butter

8 oz cream cheese, softened

1 can sweetened, condensed milk (14 oz)

1/3 cup key lime juice (about 8-10 key limes)

2 TBS lime zest

Whipped cream

 

Place the graham crackers in a gallon size ziplock bag. Use a rolling pin to crush finely. You can also use a food processor to speed things up. But what’s the fun in that?

In a large bowl, mix the graham crackers with melted butter and brown sugar. Spoon 1/4 cup of crumbs into the bottom of the mason jars. Press into the bottom to form the crust.

In another large bowl, beat the cream cheese on medium until it’s light and fluffy. Add lime juice, zest, and condensed milk. Beat until smooth. Divide evenly between all the jars (about 1/3 cup each). Put on the lids and chill for an hour before serving. Garnish with a dollop of whipped cream and graham cracker crumbs. You can pop extra jars (lol) in the freezer for a quick grab-and-go dessert anytime! Easy, peasy, right?! Still need a little help?
